Super simple, low-carb, gluten-free and low-fat FIT “Lasagna” recipe to enjoy good food while staying fit!
Here on The Fit Mediterranean Monday = healthy recipe, to start the week with good food which is FIT and healthy.
This recipe is low-carb, low-fat and gluten-free. I call it fit lasagna, but well it is not really lasagna, you guys know that, right?
Instead of egg-based pasta sheets I use rice cakes, instead of bolognese sauce I use simple tomato basil sauce, instead of mozzarella we have cottage cheese. The result? A SUPER TASTY baked casserole which will leave you wanting more and more!
I am definitely going to make this again, cause let me tell you, this stuff is GOOD!
Here is the recipe!
Ingredients (serves 1):
- 3 rice cakes
- 100 g tomato sauce
- 30 g lean ham
- 1 tbsp grated Parmesan cheese
- 60 g cottage cheese
To assemble this “lasagna” all you have to do is to drop one tablespoon of tomato sauce into a baking tray, then lay 1 rice cake layering on top some cottage cheese, ham, a bit of parmesan cheese and a 1 tbsp of water. Repeat to make a total of 3 layers of rice cakes.
Cover with plastic wrap and place it in your fridge for a couple of hours.
Bake in pre-heated oven at 200 C for about 15 min.
Remove from the oven and enjoy!
