No dairy, no gluten and no refined sugar in these healthy and nutritious muffins!
You say muffins, you say chocolate and I am hooked. However most of the time that means lots of refined sugars, unhealthy fats and unnecessary calories.
Not today though! Today I am bringing to you a delicious, simple and healthy recipe to make soft and moist muffins at home which are chocolaty and naturally sweetened.
Did I mention that they are also gluten-free and dairy-free?
- 2 ripe bananas
- 2 organic eggs
- 2 tbsp coconut oil (organic cold pressed gre3n)
- 1/3 cup apply sauce
- 1/4 cup almond butter
- 1 tsp vanilla extract
- 2/3 cup GF oat flour
- 2/3 cup almond flour
- 1/4 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 c dark chocolate chips
In a large bowl mash bananas with a pinch of salt. Add eggs, coconut oil, apple sauce, vanilla extract and almond butter and whisk until all the ingredients are combined.
Fold in the dry ingredients
Chop up some dark, vegan chocolate or use chocolate chips and add those to the batter, gently folding them in.
Divide batter in muffin cups filled up to 2/3. Add on top a slice of fresh banana if you fancy
Bake in pre-heated oven at 180 C for about 22-25 min. Remove from the oven and let your muffins cool down on a wire rack.
Store under a glass bowl for 2 to 3 days (if room temperature is not too hot) or in your fridge for up to 5 days.
