I certainly did! On Saturday I group of friends and I moved to a summer house we have rented for the whole week. The place is AMAZING, beach front with an amazing view! We spent the whole weekend swimming, cooking together yummy food and laughing.
I am now back to Lecce for a couple of days since I need to get some work done, but I will be heading back to the beach house on Wednesday and I will stay there ON VACAY until Saturday!
Because today is healthy Monday, I am going to share with you an easy and yummy overnight porridge recipe! I find that overnight oats are just perfect for busy work morning. You make them the night before and the following day all you have to do is to take the bowl our of your fridge, add whatever topping you fancy and enjoy!
For this oatmeal bowl I used a mix of oats and spelt oats, wheat bran and ground flaxseeds. Prepare it the night before and let is sit in your fridge overnight to have breakfast ready to go once you wake up!
Ingredients (serves 1):
- 20 g rolled oats
- 20 g rolled spelt oats
- 10 g wheat bran
- 10 g ground flaxseeds
- 1/2 cup unsweetened all natural almond milk
- 70 g greek yogurt
- 2 tbsp protein cream (by foodspring)
- coconut chips, mix of seeds (optional)
Start off by gathering all your dry ingredients and collect them into a bowl
Pour in the almond milk, stir, cover with plastic wrap and microwave on high for 1 and a half min.
Stir again and let cool down to lukewarm. Then add in the greek yogurt and stir it gently.
Cover the top with 2 tbsp of protein chocolate cream, cover with plastic wrap and refrigerate overnight.
The following morning, top off your oatmeal with your preferred fruits or nuts or coconut chip. What ever you fancy!
