Fit Ice Cream Sandwich

Sugar-free, low-carb, gluten-free ice cream sandwich recipe easy to make, yummy and healthy!

It’s SO hot that ice cream is all I have been craving recently. In fact, I have JUST order my new ice cream maker from SMEG. It should arrive in a few days and boys, I will be making SO MANY TYPES of ice creams, granita and SO MUCH more, so stay tuned!

While waiting for that to happen tho, I have experimented with some fit ice cream recipe.

Today I am going to share with you a low-carb, low-sugar, high-protein fit ice cream sandwich recipe! Excited?

Ingredients:

for the vanilla cookie

  • 20 g GF oat flour
  • 10 g rice flour
  • 5 g organic honey
  • 1 g baking powder
  • 1/4 tsp vanilla flavour
  • almond milk as needed

for the chocolate cookie

  • 20 g oat flour
  • 10 g rice flour
  • 5 g unsweetened cocoa powder
  • 5 g organic honey
  • 1 g baking powder
  • almond milk as needed

for the filling

  • 150 g vanilla greek yogurt (soy or cow)
  • 3 g gelatin
  • a little of almond milk

In a colander drain the yogurt to release any excess water

Meanwhile soak the gelatine in cold water for 10 min, then melt it in a saucepan with a little bit of almond milk. Let it cool down slightly then mix it with the yogurt until creamy. Refrigerate while you move on to making the cookies

In a bowl combine all the ingredients for the vanilla cookies

mix until you get a soft and smooth dough

In a separate bowl mix all ingredients for the chocolate cookie

Roll it out and using round cookie cutters, cut out 4 rounds per flavour

Bake in pre-heated oven at 180C for about 15 min. Let the cookies cool down completely

Take the filling out of the fridge. It should now be very think.

Using cookie cutters, cut out rounds (same size of the cookies) and place it in between on vanilla and one chocolate cookie

Store your fit ice cream sandwich in your freezer for up to 1 week or in your fridge for 2 days.

I feel they are at their best when left for 3-4 hours in the fridge as the cookie gets to soften up a bit and it really taste like an ice cream sandwich!
