Avocado Peach Tart | GF | DF

Sweet and healthy fruit tart which is gluten-free and dairy-free.

It’s Friday folks, which means the weekend is officially starting (#happyme) and it’s time for our Dessert-Friday!

This week I want to share with you this tart made with avocado and GF oat flour with a sweet peach filling.

This recipe is also dairy free, as instead of butter we use avocado!

  • 300 g GF oat flour
  • 1 large lemon (zest and juice)
  • 1 large organic egg (you can use a flax egg for vegan option)
  • 1 tsp baking powder
  • a pinch of salt
  • 3 peaches, sliced
  • dash of cinnamon
  • 2 tbsp tapioca flour
  • 2 tbsp cane or coconut sugar
  • 100 g cane or coconut sugar
  • 100 g ripe avocado
  • 1 tbsp lemon juice

In a blender puree avocado, lemon juice and egg. In a large bowl combine oat flour, lemon zest, baking powder, salt and 100 g of sugar.

Add the avocado cream and stir until you get a smooth and soft dough.

Roll out the dough in between 2 sheets of parchment papers and refrigerate for a few hours.

Meanwhile slice the peaches and dress them with 1 tbsp of lemon juice, cinnamon a pinch of salt, 2 tbsp of sugar and the tapioca starch.

Line a spring form pan with parchment paper, lay the pie crust and pour in the filling, then fold in the edges to make a crust

Bake in pre-heated oven at 180 for about 40 min. Let the pie cool down completely before removing it from the pan.

Serve it up with a dust of powder sugar and some whipped cream!
