Spelt Oats and Hemp Peach Cookies

Packed with protein and fibres, this low-carb cookies are a healthy snack perfect for the whole family!

Let’s start this week with a healthy snack recipe, perfect to feed your sweet tooth any time of the day 🙂

The other afternoon I was home working and was craving something sweet to snack on. Weirdly enough I had nothing ready at home but a bowl of freshly picked peaches.

I knew that if I had just eaten a plain peach and nothing else I would have been hungry in less than one hour, so I decided to experiment and make a new healthy cookie recipe.

Just a few days earlier at the store I had bought spelt oats which I was dyeing to try too!!!

So here is how I came up with this simple recipe which will give you soft, sweet cookies which are healthy, low-carb and low-fat too. One cookie provides: 77 kcal, 3,6 g carbs, 5,3 g fat, 3,5g protein.

Not bad uh?

Ingredients (makes 12 cookies):

  • 1/2 cup hemp seeds
  • 1/2 c spelt oats
  • 1 tbsp ground flaxseeds
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 2 tbsp erythritol
  • 1 whole medium egg (50 g) – (replace with 1 flax egg for vegan option)
  • 1 tbsp melted coconut oil
  • 100 g diced peach
  • 1/8 tsp himalayan salt

Measure up some hemp, natural source of fibres and protein!

Then measure half cup od spelt oats. I had never had spelt oats before and I absolutely LOVE them now. They are crunchier than standard oats and with so much more flavour.

In a high-speed blender process both hemp and oats to turn them into flour. In a bowl combine powdered hemp and oats, salt, sugar, cinnamon, baking powder and flax. Stir all the dry ingredients together then add the diced peach

Fold in the egg and melted coconut oil until all ingredients are combined. You should get a soft and moist but shapable mixture.

Pre-heat oven at 190C, scoop out dough onto a baking tray

and bake for 12-15 min. Let the cookies cool down completely

If very hot (as it is now in Italy) I would suggest to store the cookies into an air-tight container in your fridge, this is because since we used fresh fruit they might go off fast.

However, since these cookies are SO YUMMY, SOFT AND MOIST I believe they will not last longer than 48h on your counter!!!
