Light and delicious summer salad which is also vegan!

How has your week started off? Mine with a fantastic workout at the gym this morning at 6:45 followed by my iced barley morning coffee and a VERY busy morning of work.
It’s time now for our weekly healthy recipe, to kick start the week with something nutritious, tasty and light to help recover from our weekend’s indulgences.
Today’s recipe is a simple vegan salad made with beets, zucchini, fresh greeds and walnuts seasoned with a simple sauce made of EVO, coconut vinegar, salt, pepper and garlic!
Ingredients (serves 2):
- 2 medium boiled or steamed beets (peeled and chopped)
- 80 g mixed greeds
- 2 medium zucchini
- salt and pepper
- 8 walnuts
- 1/2 tbsp extra virgin olive oil
for the seasoning
- 2 cloves fresh garlic
- 2 tbsp extra virgin olive oil
- 1/2 tsp Himalayan salt
- 1/4 tsp ground black pepper
- 2 tbsp coconut vinegar (@gre3n)
First off, in a skillet heat up 1/2 tbsp of EVO, slice up the zucchini, season with salt and pepper and cook them on both sides until crispy.
In a large bowl lay the greens and beets
Add the zucchini and chopped walnuts.
In a bowl combine all the ingredients for the seasoning.
Stir them well and pour them on top of the salad
Toss and serve it up!
I made this salad yesterday, added some baked tofu and brought it the beach as my lunch. It was SO YUMMY.
You could also add some crumbled feta cheese if you are not vegan, just giving you options 🙂
