Quick Bluberry Pumpkin Seed Oatmeal Bowl

An easy and energising breakfast bowl packed with fibres, healthy fats, good carbs and probiotics!

No need to say it again, I think by now you know about my OBSESSION WITH OATMEAL BOWLS. I basically have oatmeals pretty much everyday, either sweet or savoury (with ham, salmon, eggs and much more).

Here on thefitmediterranean.com I have already shared with you some of my favorite oatmeal recipes, but today I want to bring a new one which is not only rich in healthy fats, carbs and fibres but got also a good amount of probiotics from homemade kefir!

Making this bowl really takes less then 10 min so perfect for those busy mornings!

Ingredients (serves 1 or 2 smaller portions):

  • 30 g rolled oats
  • 2 tbsp whole wheat bran
  • 1 tsp ground flaxseeds
  • water (as needed)
  • 1/4 cup fresh blueberries
  • 2 tbsp blueberry kefir
  • 1 tsp pumpkin seed butter
  • 1/2 sliced kiwi
  • 1/2 ripe banana

In a large bowl place oats, flax and whole wheat bran

stir and add enough water to cover the grains.

Cover the bowl with plastic wrap and microwave for 2 mins (option, you could cook it on the stove).
After cooking the oats should be nice and creamy

Mash the banana

Add it to the bowl of oats and stir it in.

Add some blueberry nectar to a batch of plain kefir (I like to make mine at home with kefir grain and organic full fat milk).

Top your oatmeal with some blueberry kefir, a tsp of pumpkin seed butter, some fresh blueberries and kiwi

And serve it up!

I like to stir all the ingredients together and make a nice creamy mixture! This bowl will fuel your body for hours. I find it perfect as a pre-workout snack!
