A fully vegan, Keto-friendly, low carb raw salad made with zucchini noodles and dressed with a creamy peanuts and coconut milk sauce.
Dinner is ready in literally 10 min with this easy, raw, vegan recipe.
Low-carb, it is also good for those on a Keto diet or if you are on carb cycling, for your low-carb days.
All you need is peanuts, coconut milk, fresh zucchini and a few cherry tomatoes.
- 2 to 3 large zucchini
- 1 cup + 1/4 roasted peanuts
- 1 cup coconut milk
- 1 tbsp extra virgin olive oil
- 8 cherry tomatoes, diced
- Himalayan salt
- Ground black pepper
Soak 1 cup of peanuts for 30 min
then drain and blend them with the coconut milk until creamy. Season with salt and pepper
Wash the zucchini
using a spiralizer shred your zucchini into noodles shape
Chop up the remaining 1/4 cup of peanuts
Place your zoodles into a large bowl and dress them with the sauce, add the diced tomatoes, and top it off with the chopped peanuts
Stir all the ingredients together
Add some extra crushed peanuts if you fancy.
Refrigerate until ready to serve or enjoy immediately!
