Refreshing potato salad, which is deliciously creamy and full of flavour!
Recently on my IG profile (if you are not following me there, well you should! ID: the_fit_mediterranean) in one of my stories I ran a small poll asking people what recipe they would have wanted me to publish next. The choice was between a raw vegan salad or a Mediterranean one.
Over 70% voted for mediterranean, and since I listen to you guys, today is the day I share this simple, yet delicious recipe!
It has all the classic Greek flavours: fresh herbs, feta, olives, a yummy yogurt dressing. This dish makes a great summer meal. You can make it a head of time, in fact it stores well in the fridge for several days.
Ingredients (serves 4-6 people):
- 4 large potatoes
- 120 g cherry tomatoes
- 60 g fresh rocket
- 120 g feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 80 ml greek yogurt
- salt and ground black pepper
- 1/3 cup kalamata olives
- 1/2 avocado
First off, in a large pot of water boil the potatoes until tender. Peel them and let cool completely.
Once cooled down to handle, chop them up into small cubes, wash and chop the tomatoes, dice the avocado, as well crumble the feta cheese
remove the pit from the olives, chop them up and add them to the bowl.
In a small bowl stir in oil, yogurt salt and pepper. Add to the salad and stir until all the ingredients are combined.
Add the fresh rocket leaves
Stir them in and refrigerate for a couple of hours.
