Gut-healing bread rolls, made with kefir whey, turmeric and poppy seeds.
I have been loving using kefir whey when baking. The natural bacteria in the whey enhance and strengthen the power of yeast facilitating fermentation in the dough. This will get you a super soft baked product.
Kefir whey together with the health benefits of turmeric make this bread rolls a real superfood!
Enjoy them with your meals or as a grab-and-go snack!
- 80 ml kefir whey
- 180 g bread flour
- 1 tsp turmeric
- 1 tsp sugar
- 1 tsp + 1 tbsp extra virgin olive oil
- 1 tbsp poppy seeds
- 5 g fresh yeast
- 2 g salt
Warm up the kefir whey to lukewarm, dissolve yeast and sugar. Combine flour and salt
Add 1 tsp of oil and whey mix to the flour, knead the mixture until you get a smooth and elastic dough.
Place the dough into a bowl, cover with plastic wrap and place it in your oven (turned off). Let it rise for 3 hours.
Roll out the dough onto parchment paper. In a small bowl mix together oil and turmeric. Brush it to the dough, sprinkle with poppy seeds.
Roll up the dough and then cut it out into rolls.
Bake in pre-heated oven at 180 C (375 F) for 30 min. Remove from the oven and let it cool down a bit for 10 min.
I paid them with a nice grilled chicken and avocado salad, but they are great also as a grab-and-go snack to pop into your month when needed.
Store in a ziplock bag for a couple of days!
