Light and delicious cake made with lots of apples, very little sugar and with a delicious lemon aroma.
If you are looking for a light, little treat to enjoy without jeopardise your diet, well this cake is what you need.
Made with lots of apples and very little flour and sugar, it will satisfy your sweet tooth while still keeping you on track on the scale!
It is also dairy-free, in case of any intolerance.
Ingredients (makes one 8 inch cake, 8 slices):
- 50 g sugar
- 70 g flour
- 2 whole eggs
- 1 tsp baking powder
- a pinch of salt
- 500 g peeled and sliced apples
- 100 ml soy milk (or almond milk)
- 20 g melted coconut oil
- 1/8 tsp vanilla paste
- zest of 1 organic lemon
In a bowl of your stand mixer beat up eggs and sugar until light in color
In a bowl melt the coconut oil then add the milk
Add dry and wet ingredients into the bowl with the eggs and gently mix everything together. You should get a light and pourable batter. Slice up the apples VERY thin and add them to the batter. Gently fold them in to avoid braking them.
With a little extra coconut oil, grease a pan and dust it with flour. Pour the cake mixture in the pan, level it.
Bake the cake in pre-heated oven at 180 C for about 40 min. Remove from the oven and allow to cool down completely before removing it from the form.
Dust it with some powdered sugar, slice it and serve it up.
This cake is SO moist, sweet and light.
