Blueberry Coconut Protein Squares

Homemade healthy, sugar-free, gluten-free protein squares! Sweet blueberries combined with a delectable coconut favour!!!

I’ve got a sweet tooth, there I said it! After each meal I need to have something sweet to feel fully satisfied.

These little sweet bars I made while still in Shanghai, have got the right balance between nutritious and sweetness and are packed with fibers and protein!

I have used blueberry, but chocolate chips would work perfectly too!

And did I mention that they are GF, sugar-free and low-carb? 😉

Ingredients (makes 22 servings):

  • 1 cup vegan vanilla protein powder
  • 1/2 cup melted coconut oil
  • 1/2 cup greek yogurt
  • 2 tbsp stevia
  • 1 cup unsweetened dry coconut
  • 1/2 cup coconut flour
  • 1/2 cup frozen blueberries
  • 3 tbsp hemp seeds
  • 1/3 cup coconut cream (or full fat coconut milk)
  • 1/4 tsp salt

In a bowl combine all the dry ingredients

For this recipe you can use full fat coconut milk or coconut cream. I prefer the cream as it adds extra texture to the mixture!

Melt the coconut oil

and mix it up with the greek yogurt

Pour the wet ingredients into the dry one and mix together. If mixture is too dry, add more coconut milk, if too wet add more protein 😉

Next up, fold in the frozen blueberries!

Press the mixture into a baking tray and bake at 180 C for 20-25 min.
You could also roll the mixture into balls and store into your fridge as a raw-dessert!

But if you are baking them, then let the cake cool down then cut it up into squares.

These make a terrific pre workout snack or breakfast. They are soft and delicious!

Protein: 5.5 g
Carb: 5 (of which fibers 3.3g)
