Paleo, low-carb one-pot recipe that’s ideal for a family dinner. High in protein and fibre, makes a healthy and filling meal!
If you’ve been reading my blog for a while, you know I’m a huge fan of cauliflower. As evidenced by a whole collection of recipes that you can find HERE on the website.
While I always grate or process my own cauli rice, it does require a food processor and a little bit of time as the florets need to be blended in small batches, else you will have a mash, rather than rice. I wanted to create a dish that is simple and nourishing yet still flavorful and delicious so I went the traditional route of fresh fish, simple EVO and herbs, but to add that extra touch, I decided to also use one of my favorite ingredients: edamame. They not only add extra color but also are a great source of fibers and proteins!
You guys are gonna love this recipe. After only 15 minutes of prep, the salmon roasts on top of a simple bed of savory cauliflower rice and edamame.
Ingredients (serves 2):
- 2 fillets of wild salmon (125 gr each)
- 2 tbsp + extra drizzle of extra virgin olive oil
- 1 cup shelled and boiled edamame
- salt and ground pepper
- 3 cup cauliflower rice
- 1 tbsp fresh cilantro, chopped
First thing first, process the cauliflower into rice, or just use pre-riced one.
Season with salt, ground pepper and 2 tbsp pf extra virgin olive oil. Lay the rice on a baking tray and roast in pre-heated oven at 200 for about 30 min, or until the edges are nice and browned.
Remove from the oven and fold in the edamame.
Season the salmon fillets with salt, ground pepper and a drizzle of olive oil.
Lay them on top of the cauliflower rice and edamame and roast for 8 more minutes.
Remove from the oven,
plate it and serve with a sprinkle of chopped fresh cilantro!
Add a squeeze of lemon if you fancy!
