Moist and not too sweet plant based banana bread enriched by one of my favorite superfood, matcha powder!

What makes it even more special? The addition of matcha powder, one of my favorite superfood!
I made this bread a few weeks ago and brought it to the office, my Chinese coworkers whipped the whole loaf off in just a few hours!

Ingredients (makes one large loaf):
- 3 ripe bananas
- 250 g all purpose flour
- 1 tsp baking powder
- 1 vegan egg (1 tbsp ground flax + 3 tbsp water)
- 100 g coconut sugar
- 180 ml rice milk or oat milk
- 60 g coconut oil, melted
- 1 tbsp matcha powder
- a pinch of salt
In a bowl of your electric mixer mash the bananas, then add the melted coconut oil
flax egg, milk and sugar. Mix until all the ingredients are combined
Add the flour, baking powder, salt and matcha powder. Stir them in just until combined
Line a bread loaf with parchment paper and pour in the batter. Slice up the 3rd banana length-wise and lay it on top of the batter
Bake at 180 for about 40-45 min or until a toothpick inserted in the centre comes out clean.
Let the bread cool down completely before slicing it.
