A very healthy version of the traditional Italian panettone, a Christmas classic in Italy!
Thick slices of soft, warm Italian panettone are the kind of treats that Christmas is all about in Italy.
Panettone is a typical Christmas cake throughout Italy and in Italian communities around the world, but it comes from the northern Italian city of Milan. A panettone—which literally translates to “big loaf”—is a large, dome-shaped cake that has been leavened with yeast. It has a slightly light and airy texture, but a rich and buttery taste, and is not very sweet.
The classic Italian panettone is a real beauty and as most tasty holiday threats is also a real calories beast!
This is why I have come up with a VERY healthy version, which will do no arm to your waistline!
Don’t get me wrong I am not the type of person that counts calories on Christmas Day, but considering that Christmas celebration starts WAAAAYYY before the 25th of December, with lots of dinners and gatherings with friends and relatives, well than if you pile up calories on calories day after day, by the end of the holiday season you will find yourself with more than just a few kgs heavier! Then on Christmas day just indulge and enjoy anything you want 🙂
My healthy alternative to the classic Panettone cake, is for the days before or after xmas, like if you are throwing a party with your friends, serve them healthier food. You will still be able to enjoy your time together around the dining table, but without compromising all your efforts of the past months!
This recipe calls for very simple ingredients: barley or spelt flour, eggs, coconut oil, coconut vinegar, mix of nuts and dry fruits, spices and bananas.
It is made with no added sugars, no butter and if you use the barley flour it is also gluten-free.
For the nuts and dry fruits I have used the products of Green Bite.

Ingredients (makes 1 small panettone cake):
- 1 cup barley or spelt flour
- 1 egg
- 2 tbsp melted coconut oil
- 1 medium ripe banana
- 1 tbsp gre3n coconut vinegar
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 packs of green bite nuts and fruits (I used dry cranberries and a mix of almonds, peanuts, walnuts and cashews)
- 1/4 bag gre3n coconut chips
In a bowl mash the banana together with the coconut vinegar
add the spices, baking powder and soda
Incorporate the egg and mix. The mixture should start to get a little bubbling, this is the natural chemical reaction of the baking powder with the coconut vinegar!
Add the flour and while stirring pour in the melted coconut oil. Fold in nuts and dry-fruits
Grease and flour a 10-12 cm spring-form pan and pour mixture in.
Bake in pre-heated oven at 160 C for about 40-45 min. Remove from oven and let the cake cool down. See how much it grew?
it should become almost double in size!
For the topping, instead of using powder sugar I decided to use coconut chips! Yes…you got that right. I just smashed them using a rolling pin, until they turned into powder
and I sprinkled them on top of my FIT Panettone!
Slice it up and enjoy it with a nice cup of coffee or tea!
