Homemade Mocha Protein Bars (gluten-free, sugar-free, vegan)
Fully vegan, sugar-free, gluten-free, low-carb protein bars easy to make and that don’t need to be baked. Sounds too good to be real?

Made with espresso, chocolate vegan protein powder and chocolate chips, they are chewy, soft and absolutely delicious. And what makes them even better is that they DON’T NEED TO BE BAKED!
Just one bowl, a few simple ingredients and a couple of hours in the fridge, and there you have your homemade protein bars.
Ingredients (makes 10 thin bars or 8 thick ones):
- 80 g espresso
- 140 g cashew butter, raw (no oil)
- 180 ml almond milk
- a few stevia drops
- 170 g vegan chocolate powder
- 10 g dark cacao powder
- 40 g oat flour
- 50 g dark chocolate chips
For this recipe you can use all-natural cashew butter as well as almond butter
Place all ingredients into a bow
and stir until they come together into a sticky mixture
Spread it into a baking tray layered with parchment paper and refrigerate overnight or for 8 hours
Following day, cut off 8 or 10 equal-sized bars
Store your bars into the fridge and enjoy when needed.
