Mediterranean Style Bell Peppers
A perfect easy and full of flavor side dish which features bell peppers, capers, EVO and fresh parsley

This recipe features some of the mediterranean flavor in an easy casserole: bell peppers, capers, lots of EVO make a delicious side to pair with meat, poultry or also rice!

Ingredients (for 2 servings):
- 1 yellow and 1 red bell peppers
- 2 tbsp olive oil
- 1 tbsp caper
- 3 tbsp breadcrumb
- chopped parsley, salt
- 1 clove garlic
- salt and pepper
Wash the bell peppers,
cut them into strips.
In a skillet heat some oil and garlic and add the bell peppers. Season with salt and pepper add the capers, cover with a lid and let cook at low heat for about 20 min or till tender.
Remove from heat and stir in breadcrumb and fresh chopped parsley. Transfer to a baking dish. Drizzle some more EVO if needed.
Bake at 180 for 15 min or until a nice crust forms on top.
Serve and enjoy as a side to your meat, or mixed with rice .
