Creamy Strawberry Nice Cream

Vegan, gluten-free, refined sugar-free and dairy-free creamy “nice cream” enriched with raw cashew butter for a boost in heathy fats and protein.

It’s getting chilly here in Shanghai, but I am not (yet) ready to give up on my healthy ice cream. I am Italian after all!

Today’s nice-cream recipe calls for the traditional frozen fruits (banana and strawberries this time), but it’s made extra creamy and rich in flavour by the addition of some raw 100% all natural cashew butter.

Nut butters are such a healthy source of fibers, fats and protein and I LOVE how versatile they are in the kitchen. I like to use them to make cookies, cakes, smoothies but also pasta sauces and much more.

For today, let’s NICE-CREAM! Shall we?

This banana ice cream is fully vegan, with no dairy, no refined added sugars and gluten-free too. Indulge with no guilt but only full pleasure!


  • 2 sliced and frozen bananas
  • 1 cup frozen strawberries
  • 1/4 cup raw cashew butter
  • a pinch of salt

Place frozen fruit into a powerful blender

Get your hands on some raw, oil-free, salt-free, sugar-free all natural cashew butter

Add 1/4 cup of that to your blender. This will make the nice cream extra creamy

Blend everything until creamy. You will need to stop and stir a few times. It will take 2-5 min depending on how powerful is your blender. You can also use a food processor

Transfer mixture into a glass container and freeze for 2 hours
