Bell Pepper Chicken Rolls
Dinner is made easier with this simple mediterranean style chicken rolls, full of flavour and super healthy.
This is the type of recipe that you can make ahead of time and just warm it up when needed, that you can cook in large quantities, portion out and freeze for ready-to-eat week dinners, it’s the type of recipe that please a whole crowd.
Pair it with some brown rice, quinoa, cous cous or even cauliflower rice (for Paleo, low-carb option) and there you have a balanced and tasty meal.
This dish calls for very Mediterranean ingredients: bell peppers, capers, extra virgin olive oil simple organic chicken. I LOVE IT!
Ingredients (serves 2):
- 1 organic chicken breast, sliced
- 1 red and 1 yellow bell peppers, grilled
- 2 tbsp extra virgin olive oil
- 1 tbsp capers
- salt and pepper
- 1/2 cup dry white wine
- fresh flat leaves parsley
Slice up the chicken and season each with salt and pepper
Grilled and peel the bell peppers
on each slice of chicken place a slice of red and a slice of yellow bell peppers, some capers and parsley
roll it up and seal it with 2 tooth sticks
In a skillet heat up the EVO, add the chicken rolls, season with salt and pepper and cook on medium-high until the meat has got a nice golden-brown color. Pour in the wine and scratch the bottom of the pan.
Add the remaining bell peppers, more salt and pepper, capers and cook on low for 15-20 min or until liquid has absorbed and you are left with a creamy sauce.
Turn off the heat, add some fresh parsley and serve!
