Protein Chocolate Ice Cream

Only 3 g of net carbs and 17 g of protein, this ice cream is the perfect low-carb snack on hot days when you need a quick pick me up.

When I made this recipe I was looking for a new way to have my protein powder without always blending it into a shake. I also wanted to be able to eat ice cream on my low-carb days, because, let’s face it, a gal needs her chocolate and an Italian gal (AKA me) needs her chocolate ice cream, no matter the macros or day of the week!

This no-churn FIT ice cream is easy to make, calls for just a few simple ingredients (and NO BANANAS this time), it is fully vegan and sugar-free too!

This makes a smooth and creamy “ice cream” that is healthy and makes you feel like you are cheating but you aren’t!

Score! Who doesn’t love that?

Ingredients (make 1 serving):

  • 1 + 1-4 cup almond milk
  • 1 scoop chocolate Sun warrior protein powder (or any vegan protein powder, or whey chocolate protein powder if you are not vegan)
  • 1 tablespoon unsweetened cocoa powder
  • 1 packet stevia
  • ¼ teaspoon vanilla extract

Combine all ingredients (only 1 cup of almond milk) in a glass measuring cup

and whisk vigorously until completely combined and no clumps remain. You can use a blender if you prefer.

Pour the mixture into an ice cube tray and freeze until solid. Then blend in a blender with as much almond milk as need to make that lovely ice cream texture (probably about ¼ cup).

Scoop it out and serve.

The whole batch provides only 120 calories, 3 grams net carbs and 17 grams of protein. Suck a winner!
