Fit Almond Butter Granola, 100% vegan!

Crunchy, chewy, nutty, and sweet. This vanilla almond butter granola makes a nutritious and delicious breakfast or snack!
I am a sucker for breakfast. It is my MOST favorite meal of the day. Over the weekend, I love to get up and treat myself to something special: pancakes, waffles, homemade yogurt with berries, healthy french toasts, eggs…You name it.
Since I have started following a new macro and training plan, which I got from my new coach, weekends are my highest carb days so I really get a chance to indulge!
This granola is what I enjoyed this Saturday morning with a splash of homemade almond milk and a few coconut chips.
It combines two of my current obsessions: oats and almond butter making a chewy and crunchy granola. Add some dark chocolate chips or dry fruit to make it even more YUMMY!
Ingredients (makes 2 cups of granola):
- 1-1/2 cup oats
- 1/8 tsp Himalayan salt
- 1 tbsp chia seeds
- 2 tbsp coconut oil, melted
- 1/4 cup almond butter
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/4 cup dark chocolate chips or dry fruit (like raisins or cranberries)

Prepare all your ingredients
In a large bowl mix them all together stirring until well combined
Spread on baking sheet
and bake at 160 C for 25 min or until golden-brown in color. Let it cool down completely then break it up into chunks with your hands
Store into an airtight container
Enjoy with your preferred milk, or yogurt or as topping for your smoothie bowls
