Parchment Paper Mediterranean Style Sea Bass
A light, healthy and tasty way to cook your fish in a quick and hassle-free way!
This dish gathers all the mediterranean flavours: a fresh catch, red cherry tomatoes, black olives, capers, parsley, lemon, garlic and lots of extra virgin olive oil!
You can prepare it ahead of time, wrap it in parchment paper and just pop it in the oven 30-40 min before dinner time!

Pair it with a chilled glass of dry white wine and a side of pilaf rice!
- 1 whole sea bass
- 2 cloves of garlic
- 1 tbsp extra virgin olive oil
- 5 ripe tomatoes
- 3-4 kalamata black olives
- 1 tsp capers
- fresh parsley
- 1/2 lemon
Slice up the lemon, chop up the tomatoes and olives.
Season the belly of the fish with salt. Then place a few pieces of tomatoes, 1 clove of garlic, a few pieces of olives and capers, 1 to 2 slices of lemon and some fresh parsley inside.
Place the remaining ingredients on top of the fish. Season with salt and drizzle some olive oil.
Seal the parchment paper well
and cook in pre-heated oven for about 30 min at 180 C.
Remove from the oven and carefully open up the parchment paper being careful with the hot steam that will come out.
Serve it up immediately!
