Buckwheat Energy Bars

Fully vegan, gluten-free, nut-free and Paleo these bars are a perfect choice for breakfast or as afternoon snack!

If you liked my buckwheat muesli recipe, you are going to LOVE this energy bars. They are made using basically the same ingredients of my muesli, you will just need to process the mixture into your food processor a little longer so that all the ingredients form a paste that sticks together and 20-30 min later in the oven you will have your yummy, healthy, addictive-free bars.

Most healthy gluten-free energy bar recipes use some kind of nut butters, mine instead is fully nut-free, so perfect for those with allergies or on Paleo diet πŸ™‚

It is also gluten-free and vegan!!!

Ingredients (makes 6 bars):

  • 1/2 cup buckwheat
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1-1/2 tsp black sesame seeds
  • 1-1/2 tsp white sesame seeds
  • 1 cup dry coconut
  • 1/4 tsp ground cinnamon
  • 1/2 tsp cacao powder
  • 1/2 cup red dates
  • 2 tbsp maple syrup

Gather all the ingredients then soak in water the buckwheat, pumpkin seeds, sunflower seeds and red dates for 3 hours.

Place all the ingredients into a food processor and blend until a paste forms.

Press the mixture into a baking tray lined with parchment paper

Sprinkle with extra sesame seeds, dry coconut and pumpkin seeds.

Bake at 160 for 20-30 min. Remove from oven, let it cool down completely

then cut into 6 bars and enjoy πŸ™‚
