Blender Oat Blueberry Banana Bread

Flourless oat blueberry banana bread simply made in your blender. Gluten-free and Paleo, this makes a super afternoon snack or breakfast.

Use a powerful blender or, like I have done, a food processor to whip up this grain-free, Paleo, rustic, refined sugar and dairy- free, sweet bread in NO TIME. Feel free to replace the blueberries with strawberries if you prefer. Or go totally bananas with some chocolate chips and chopped nuts!

This recipe makes a dense, heavy, rustic bread which serves perfectly with a spread of cream cheese, jam or nut butter of your choice. Bake it for 45 min, let it cool down and serve it up! You will love it.

Ingredients (makes one loaf):

  • 3 cups gluten-free old fashion rolled oats
  • 3 large eggs
  • 4 ripe bananas, mashed into 1-2/3 cups + 1 small sliced thin for the top
  • 1/4 cup maple syrup or agave
  • 1 tbsp coconut vinegar or apple cider vinegar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2/3 cup fresh blueberry


Place oats into a blender or food processor

and pulse until flour

in a bowl mash the bananas

to the blender/food processor add coconut vinegar (or apple cider)

bananas, eggs, baking powder, baking soda, maple syrup, vanilla extract and ground cinnamon

pulse until all ingredients are combined

then fold in the fresh blueberries

Transfer the banana bread batter to the prepared baking pan. Smooth into an even layer and top it off with sliced banana and a sprinkle of oats

Bake at 180 C for 30-45 min. Remove from the oven and let the bread cool down on a wire rack

Serve it with whatever spread you fancy, or eat it as it is
