4 Ingredients Vegan Chocolate Mousse
This paleo and vegan Chocolate Mousse is the easiest most decadent dessert, made with NO cream, tofu, avocados, or even refined sugar involved!
Who does not love chocolate? And who does not love chocolate when it comes to its purest form and does not get “compromised” by sugar, or cream or eggs?
Well let me tell you, I DO! And I believe a few more people out there do too.
This recipe is made with organic rice milk, or any plant-based milk you like (almond, cashew, soy). Now, the key to making the plant milk base thicker without the fat content of coconut is medjool dates. They also provide all the necessary natural sugar while creamy-ing up the texture, so its a fruit-sweetened win-win.
As for the chocolate, use 100% cacao chocolate instead of using cacao or cocoa powder. This makes the pudding much richer and helps it set in the fridge without cooking or thickeners.
This recipe makes a very rich and filling dessert, one batch can easily make 4 serving and a few spoons will be enough to satisfy your chocolate tooth.
Ingredients
- 170 g unsweetened 100% chocolate
- 1/2 cup Medjool dates
- 1- 3/4 cup of non-dairy milk
- 1 tbsp coconut oil
Bring the milk to boiling point, then remove from heat and stir in chocolate until completely melted
add 1 tbsp of coconut oil and stir it in until dissolves
In a blender combine chocolate milk and Medjoon dates and blend on high speed until smooth. Pour the cream into serving cups/glasses and refrigerate for 4 hours.
When ready to serve, sprinkle the top with some crushed hazelnuts or coconut flakes.
So rich and creamy!
