Spelt Flour Choco Chip Cookies

Made with no butter and no eggs, these soft cookies have a secret ingredient. Can you guess?

At least cookies are MY LIFE. I could not go one day without treating myself with a moist, soft, better if with chocolate cookie. However, if you are (like I am) trying to drop that extra kg that has been seating on your tights for a bit too long now, well cookies might not be your best friends. However, healthy options are there even when it comes to these little evil snacks.

In this recipe I use spelt flour, which is one of the healthiest option out there. It’s very high in protein and fibers and is also grain-free (so perfect for people like me with wheat sensitivity). On top of that I use coconut oil instead of butter, healthy coconut sugar and NO eggs at all.

What makes these cookies so soft and delicious is…wait for it…my secret ingredient…can you guess what that is?

  • tofu? – nop sorry, not this time
  • almond flour? – no no, enough carbs with the spelt
  • flaxseeds? – not a bad idea, but not today
  • almond butter – ah, you almost got me there as I am addicted to it, but nop, sorry you are wrong! :p

done guessing? Ok, ok, let me show you..

Ingredients (makes 18 cookies):

  • 150 g spelt flour
  • 60 g coconut oil (NOT melted)
  • 40 g coconut sugar
  • 160 g ricotta cheese – YES THE SECRET INGREDIENT!
  • 1 tbsp baking powder
  • 1 tbsp ground cinnamon
  • 1 cup chopped chocolate chunks or chips

We wont be using any eggs nor butter but cold-pressed organic coconut oil

In a food processor place all the ingredients (minus the chocolate chips)

Blend until you get a smooth dough

Fold in the chocolate chunks (or chips) and refrigerate for 15-20 min.

Drop tbsp of dough onto parchment paper, slightly flat them down using your fingers and bake in pre-heated oven at 180 C (375 F) for 10-12 min.

Remove from the oven and let your cookies cool down on a wire-rack. Serve them up with a hot cup of tea or hot chocolate or milk or just eat them straight out of the jar!
