Cinnamon & Thyme Sweet Potatoes
Roasted sweet potatoes spiced up with cinnamon and thyme, easy and so healthy!
I have always loved sweet potatoes, but recently they have become an addiction. I have literally been eating them every day for the last month! Baked, grilled, boiled, sauteed!
If you are a sweet potato lover, like I am, well cheer up! Sweet potatoes have SO many health benefits: they are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.
I had a bag of this small purple skin sweet potatoes and decided to cook them with one of my favorite spices: cinnamon, together one of my favorite herbs: thyme!

Ingredients (serves 2):
- 300 g sweet potatoes
- 1 tbsp + extra to drizzle extra virgin olive oil
- 1 tsp or tbsp ground cinnamon
- fresh thyme
- 1/4 tsp Himalayan salt
Peel and slice or dice the sweet potatoes
In a baking pan coat them with 1 tbsp of extra virgin olive oil, ground cinnamon, salt and fresh thyme
Bake them at 200 C for about 20-30 min or until cooked
Remove from the oven, transfer them into a serving plate, drizzle with some extra EVO and fresh thyme and serve them up!
