Barley Coffee Nice Cream
Fully vegan and gluten-free, this nice-cream has got a distinct strong barley coffee flavor. You will LOVE it!
It’s getting weirdly cold here in Salento. Generally this time of the year weather is still quite warm with people still spending weekends at the beach. This year instead, rain has started and wind is blowing chilling me to the bone.
However, I’ve got only 1 and a half month here at home before heading back to Shanghai and I am determined to enjoy all the ice cream I can. Thus I am keep making my fav nice-cream, which is healthy, lower in sugar than standard gelato yet super creamy and yummy.
Today I share with you this recipe which features barley coffee and oat milk. Fully vegan and gluten-free for all you friends out there 🙂
- 3 bananas, sliced and frozen
- 2 tbsp barley coffee
- 1 tbsp oat milk
Slice and freeze 3 ripe bananas overnight
Grab some instant barley coffee
Place all ingredients into a food processor and blend until creamy
Transfer mixture into a container and freeze for 2 hours. Then scoop it out and serve
If you like, you can also use standard instant coffee powder
