Basmati Rice Milk Chia Pudding with Coconut Chips

I LOVE breakfast! I literally get out of bed and first thing I can think of is getting food. Sometimes I even fall asleep the night before thinking of what I will get for breakfast the following day! Yes,that’s how bad of an obsession I have got.
Overnight chia pudding are such an easy fix for busy morning. Chia seeds are among my favorite super food. They are high in fiber, protein and omega-3 helping you feel full and energized, supporting your immune system, gut-health and healthy skin!
This time I decided to use basmati rice milk, thick Greek coconut yogurt and fresh blueberries and a local fruit I always get when I am in italy this time of the year: fichi d’India. Vegan breakfast, easy to make and super YUMMY!
Ingredients (serves 2):
- 250 ml organic basmati rice milk
- 1/4 to 1/3 cup chia seeds
- 1/4 cup coconut chips
- 2 fichi d’india, sliced
- 1/2 cup blueberries
- 1/2 cup coconut greek yogurt
- 1/2 tsp black and white sesame seeds
The night before in a large bowl pour stir in milk and chia seeds. Cover with plastic wrap and let it sit in your fridge overnight. That’s how it should look the following morning
Grab some fresh blueberries and fichi d’india
peel the fichi d’india and slice them up
Top off the pudding with thick Greek yogurt, fruit, a handful of coconut chips and some sesame seeds. Serve it up!
