Vegan Avocado Ice Cream

Creamy, dense, green and luscious this ice cream is made with only natural and plant based ingredients. A little summer treat without the threat 😉

I could not live one summer day without ice cream. I can literally eat a whole pint by myself and feel no guilt. However I do care about my health and as I try to cut down on all processed foods and artificial sweeteners I am also trying to avoid consuming manufactured gelato.

This recipes is super low in carbs, high in fats and delicious, so perfect if you are following a Keto diet or a LCHF one. All you need are simple ingredients and a blender! To boost a bit the protein content I have added 2 tbsp of pea protein and 1 tbsp of Tropeaka Ultra Cleanse.

Ingredients (makes 500 g):

  • 1 whole ready to eat avocado
  • 1 can of coconut cream
  • 1/4 tsp xantham gum (optional)
  • 1 tbsp agave syrup or maple syrup
  • 2 tbsp pea protein powder
  • 1 tbsp Tropeaka Ultra Cleanse

Gather all your ingredients

place them in a blender and process until creamy. Then add the xantham gum and fold it in.

Move mixture to your ice cream maker and process based on manufacturer instructions. Scoop it out and enjoy!

or place in the freezer if you can resist…;)
