Beef Burger in Portobello Mushroom Bun

Paleo-friendly, low-carb and gluten-free, this recipe allows you to enjoy a nice burger without any quilt! Paired with baked pumpkin fries makes the perfect diet and healthy meal.

If you are following a low-carb diet, Keto diet, if you are on Paleo or have gluten intolerance/sensibility (AKA me!) well you HAVE  to try this recipe. The beef patty is served with avocado, radish tomatoes and cucumber between 2 grilled large Portobello mushrooms and paired with some healthy oven baked pumpkin fries!

It seriously was SO YUMMY and with basically only carbs coming from the veggies. You can replace the beef patty with tuna or salmon patty or vegetarian options made with soy or beans. You can add pickles, onion, eggs as well. Just go with whatever rocks your boat!

Ingredients (serves 1 ):

  • 1 beef patty (120 gr)
  • 2 slices of tomatoes
  • 1/4 avocado
  • sliced cucumber
  • sliced radish
  • fresh rocket
  • 1 cup of pumpkin, cut into fries shape
  • 1 tbsp corn starch or coconut flour
  • salt and pepper
  • 1 tbsp extra virgin olive oil
  • 2 large Portobello mushrooms

Season the Portobello mushrooms with salt and pepper and grill at 200 C for 10 min.

Cut the pumpkin into fries shape

Season with salt and pepper, coat them into corn starch or coconut flour

and bake them at 200 c for about 20-25 min or until nice and crispy

Gather all the veggies and grill the patty on a hot pan

Now, put together your low-carb burger!

Note: I dont like onion so I skipped them but you can add some if you like πŸ™‚
