Banana Coconut Pumpkin Spiced Ice Cream

Fully vegan, healthy, creamy and incredibly tasty, this ice cream is the perfect healthy snack to cool yourself down on a hot summer day.

Made with no eggs and no cream, this ice cream gets its creaminess from the frozen bananas and the extra flavor from the pumpkin spice mix. It takes really no time to make it, all you need is a blender! In fact you can get a great final product also without using an ice cream machine!

I am not vegan, in case you were wondering, but I do like to incorporate healthy food into my diet and reduce animal source ingredients, when possibile. I feel it helps my digestion, skin and energy level.

But now let’s talk gelato!


Ingredients (serves 3):

  • 2 large frozen bananas
  • 1/2 cup peanut butter
  • 1 tsp pumpkin spices
  • 1/2 cup dry coconut
  • 1/4 tsp Himalaya salt

Place all the ingredient into a blender or food processor

and blend until creamy

Now, if you do have an ice cream machine, transfer the mixture and process based on the manufacturer instructions. It should come together in less than 15 min

If you don’t have an ice cream maker, then just place the mixture into a container and freeze it for about 1 -2 hour. Then scoop it out and serve it 🙂

You will be amazed by how, despite having no eggs or cream, it is SO creamy and it has got such a rich texture
