Vanilla Ice Cream with Clementines in Cinnamon Syrup 

Refreshing dessert which combines citrus, a hint of spice and the sweetness of ice cream!

Summer is officially here! It has been around 30-32 degrees here in Shanghai. Sunny days, rare blue skies. Such a nice weather.

Summer goes hand in hand with well, ice cream! This recipe is a little “fancy” way to serve your gelato for a nice dinner with friends.

The refreshing flavor of the clementines comes from combining citrus with a hint of spice!

Ingrediens (serves 4):

  • 2 cups vanilla ice cream
  • 1 cup water
  • 1/2 cup of sugar
  • 8 clementines (or oranges or tangerines), peeled and sliced
  • 2 cinnamon sticks
  • fresh mint

Wash up the clementines

Peel and slice them

In a saucepan bring water, sugar and cinnamon stick to a simmer until sugar dissolves

In a large bowl arrange the sliced clementines, pour in the syrup and let it sit for a few hours (overnight better)

To serve divide the clementines between 4 bowls.  Add 2 scoops of ice cream per bowl, pour the syrup and decorate with some fresh mint

Serve it right away!
