Mixed Grains and Herb Salad

This side dish is packed with fibers and fresh herbs. It’s fresh, healthy and it goes well with roasted chicken or seared fish.

Grains are such a healthy source of energy. High in fibers and with a good amount of protein too, they pair great to veggies and meat or fish.

The way I cook them today makes a great basic recipe which you can then use in several dishes. You could also add some crumbled feta cheese for a healthy and full meal salad!

I paired it to my roasted lime red snapper filet and loved every bite! But it goes just as well with roasted meat, grilled tofu, poached eggs and roasted veggies!


    • 2 cups mixed cooked grains, such as bulgur, quinoa, brown rice, farro, barley


    • 1/2 cup finely chopped mixed fresh herbs, such as parsley, basil, thyme (or anything that you like!)


    • 2 teaspoons extra-virgin olive oil


    • juice of half lemon


  • Coarse salt and ground pepper

Grab a mix of grain, whatever you like. I happened to have this pre-made mix which I brought from Italy.


Cook the grain in salty boiling water, drain and place in a mixing bowl


Grab your selection of herbs




Wash them


chop them finely and add them to the grain. Season with salt, pepper, extra virgin olive oil and the juice of 1/2 lemon


Toss together refrigerate or serve right up!


This is a perfect side with meat or fish!
