Mashed Cauliflower

Mashed cauliflower tastes similar to mashed potatoes but with fewer calories. It’s low carb and rich in fiber. I great healthy alternative for the holiday meals.

I like to add some grated parmesan cheese to mine, and you can too if you fancy.

Here is the recipe!

Ingredients (serves 3):

  • 1 large cauliflower head
  • salt and pepper
  • 2o gr grated parmesan cheese
  • 1 tbsp salted butter
Wash the cauliflower


Cut the cauliflower florets, wash them and boil them until very tender into a boiling pot of water.
Reserve 1-2 tbsp of the cooking liquid, than drain well and transfer the cauliflower into a blender or food processor. Season with salt and pepper, butter and parmesan cheese.
Pure’ until smooth adding the reserved water as needed.
Serve it up!
