Banana Double Chocolate Cake
Indulge. Yes, you heard me right, INDULGE.
There are those days when you feel like going to the gym, drink 3 liters of water, reach your macros and be super healthy, and those days are GREAT! But there are also those days when all you want to do is relax, lay on your couch, rest and indulge with something buttery and greasy.
Well, that was me last Sunday. I had a very busy Saturday with promotion of Healthy Bites at ZnB Fitness Studio, plus 1 hour spinning class and 1 hour barre and running around Shanghai for other meeting plus a final dinner at Chifan for Charity…
On Sunday when I got up I knew my body was screaming for a break, and since I always listen to my body, I decided to cancel my Spartan class, book a facial and a massage instead and relax on my couch with some tasty food. I felt like banana cake, but I also wanted chocolate, so I made this super moist, yummy banana double chocolate cake! LOVED IT.
Here is the recipe guy 🙂
Ingredients:
- 1 cup all purpose flour (125 g)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons cocoa powder
- 1/2 cup (110 g) soft unsalted butter
- 1/2 cup sugar (100 g)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mashed banana + 1/2 whole banana (about 2 medium bananas)
- 1 cup chocolate chunks
- 1/4 cup whole fat milk
Preheat the oven to 180°C. Lightly grease a loaf pan and set aside.
Mash the banana
In a bowl, beat the butter and sugar until light and creamy. Beat in the egg
then stir in the vanilla and banana
Gently mix in the dry ingredients
Fold in the chocolate chunks
You will have a creamy and smooth batter. Add 1/4 cup of milk and stir it in
Chop up 1/2 banana into small cubes
Pour half of the batter into the pan , add the banana
cover with the remaining batter
and bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Cool the bread in the pan for 10 minutes, then turn out onto a rack to cool completely
This is perfect with a cup of hot milk as an afternoon snack for you and the kids!
