Super Food Salad with Grilled Chicken

This salad is gonna rock your boat, make your skirt fly up! It is packed with super food, like kale, edamame, hazelnuts. Super high in protein, with tender grilled chicken skewers and with healthy fats!

I made it for myself just last weekend after a long day teaching cooking classes, training for a triathlon race and catching up with meetings and other work-related issues…When I got home that night I was tired and in need of real, healthy, nutritious food to feed my body. Yet the idea of eating anything hot made me just wanna go hide into my freezer!

Luckily I had bought a bag of chicken breast from Mr. Meat and had marinated some in my fridge which just needed to be quickly grilled! I also had lots of fresh veggies and some boiled edamame as well. All I needed to do was to put them all together on a plate and enjoy it! So I did, and the result was this salad, oh boy there are no words to describe it. You’ve just got to make it 😉

Ingredients (serves 2):

  • 2 chicken breast, skinless
  • 1/2 cup edamame, boiled
  • 5-6 fresh cherries
  • 2 cups kale
  • 8 cherry tomatoes
  • 2 tbsp hazelnuts
  • 1/2 large carrot

for the marinate

  • 2 tbsp extra virgin olive oil
  • 1/2 cup milk
  • 5-6 leaves of fresh mint
  • salt and pepper

for the dressing

  • 1/4 cup Dijon mustard
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • salt

First thing first, grab some skinless chicken breast

cut them into 2.5 inch cubes

place them in a zip lock bag with extra virgin olive oil, milk, salt and pepper and some fresh chopped mint.

Let it marinate for 24h in your fridge. Take the chicken out of the fridge and let it stand on your kitchen counter for a few hours

Meanwhile prepare the veggies.

Wash some kale and remove the central part, we just want the leaves

Chop them up and place them in a plate

Wash and halve some cherry tomatoes

pit some fresh cherries

and add those plus the edamame and sliced carrot to your serving plate

Chop up some hazelnuts and add them too

Arrange the chicken into skewers season with more salt and pepper

and grilled them on a hot pan, about 8 min on each side

Meanwhile prepare the dressing by combining the mustard, balsamic, salt, pepper and extra virgin olive oil into a bowl. Stir to combine.

Lay the chicken skewers onto your salad. Pour in the dressing and serve!

As I made too much for just myself, I had some leftover which I brought with me to the office the following day, the chicken got even more tender!!!
