Paleo Banana Cake

Recently I have started incorporating some Paleo recipes into  my diet. Specially when it comes to baking, I have been loving to experiment with gluten-free recipe. Certainly the results you get are different than baking with standard flour, but the taste, oh the taste is something divine!

My last experiment is this Paleo Banana Cake. I first wanted to make a bread, but this is certainly much closer to a cake. It is Super easy, quick and VERY delicious.

Here is the recipe!

Ingredients (makes one):

  • 3 large ripe banana
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp honey (or agave if vegan)
  • 2 c almond meal
  • 1/4 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 tsp nutmeg

Place the bananas in a bowl of your electric mixer

mash them on medium speed, add the eggs, vanilla extract and honey and keep mixing

Add the dry ingredients

Fold them in

Pour batter into pan flattening it out with the back of a spoon.

Bake it in pre-heated oven at 180 for 45 min. Let the cake cool down completely on a wire rack before slicing it

Slice and serve or store it in a ziplock bag in your fridge for up to 1 week.
