Paleo Bread

Recently I have gotten closer and closer to the paleo diet. I still eat everything but every now and then I like to incorporate my diet with some paleo/healthy dishes.

All the paleo baking I have tried in the past had turned out to be a total disaster, specially when it comes to bread, muffins. Until I came across this recipe on Guilty Kitchen. This bread REALLY taste like bread, no fluffy – full of air – kind of empty paleo baking product.

Give this a try, you won’t be disappointed.

Ingredients (make one loaf):

  • 3/4 cup almond butter, smooth (I used coffee flavor almond butter)
  • 5 fresh eggs
  • 2 tbsp honey
  • 1/4 cup coconut oil, melted
  • 1/2 tsp apple cider vinegar
  • 1/4 cup ground golden flax
  • 3 tbsp coconut flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt

Preheat oven to 350°F. Line an 8 x 4″ loaf pan with parchment, grease well with coconut oil. In a large bowl, combine the almond butter, eggs, honey, coconut oil and apple cider vinegar

blend all the ingredients together with an immersion blender.

In a separate bowl, combine the flax, coconut flour, baking soda and sea salt.

Mix the dry into the wet, pour into the greased and lined loaf pan and bake for 35-40 minutes.

Remove from oven and allow to cool in pan 10 minutes. Remove from pan by pulling up on the parchment. Set on wire rack to cool completely.

When completely cooled, slice it up and enjoy the way you like 🙂

This stores fine for 3-4 days or up to 1 month in the freezer.
