Matcha Muffins with Red Bean Paste
Since I have moved to Asia, I have developed a strong love for green tea. The Japanese matcha powder is so tasty and so versatile it can be used in many different ways: to make bread, cookies, muffins, pasta, drinks and SO MUCH more!
A few weeks back I decided to try combine green tea powder with an other of my Asian loves: sweet red bean paste! The result were these super moist muffins!
Here is the recipe! Happy Tuesday folks 🙂
Ingredients (makes 6):
- 1/2 cup red bean paste
- 1/3 cup granulated white sugar
- 1/4 cup unsalted butter, room temperature
- 1 whole egg
- 1 cup flour
- 1/3 cup whole fat milk
- 1 tsp baking powder
- 2 tbsp matcha powder
In a bowl combine sugar, matcha and butter and mix until creamy
add the egg and stir until combined
add the egg and mix
Add the flour, baking powder and milk and stir until you get a smooth and thick batter
Grab some red bean paste…don’t eat it!!!
Drop 1.5 tbsp batter into muffin cups, add 1 tbsp of red bean paste
cover with 1.5 tbsp of batter
Bake in pre-heated oven (180 C) for 20-22 min
Bite in…now you can 🙂
