Healthy Peanut Butter Granola Bars
A healthy snack packed with fruits and nuts to fill you up and satisfy your sweet tooth without feeling guilty!
Making healthy snacks has become my new addiction…or I should say, in order to satisfy my sweet tooth without fearing to have to change jeans size every other month, I got very much into creating sweet recipes which are low in calories, low in fat, low in sugar, packed with super foods!
This peanut butter granola bars certainly belongs to this new cathgoy of heathy eating. They are super tasty, easy to make and actually GOOD for you!
Ingredients (makes 4 bars):
- 1 large egg white
- 1/2 cup old-fashioned oats
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds and crushed almonds
- 1/4 teaspoon salt
- 1/2 cup natural peanut butter or almond butter
- 1/2 cup light brown sugar
- 3 tablespoons vegetable oil
- 1/2 teaspoon ground cinnamon
In a large bowl combine oats, almonds and cranberries
In a small saucepan whisk together oil, brown sugar, peanut butter, cinnamon, salt and 1 tbsp of water.
Heat on low until sugar has dissolved. Let cool slightly. Whisk in egg white and stir fast to avoid the egg from cooking.
Pour over oat mixture and still until moistened.
Spread evenly in a 8*4 inch baking pan which you have lined lined with parchment paper. Smooth the top.
Bake in pre-heated oven at 150 C (300 F) for about 30 min or until top is firm. Let cool down for 10 min, then lift out of pan and let cool completely.
Cut into bars and store into an airtight container for up to 1 week.
