Chicken Cacciatore

Comfort food is the best. I’ve said this MANY times and I won’t stop repeating it!
Last weekend I ordered for the first time some meat from a new online vendor called Mr. Meat. I discovered them just a few months ago and i was impressed by the variety of cuts and good prices.

I got my delivery on Saturday morning and Sunday after an intense workout session at The Clinic here in Shanghai,all i was craving for was some comfy, hearty, filling dinner meal! I made myself this Chicken Cacciatore and loved every bite of it!

Here is the recipe!

Ingredients (serves 4):

  • 4 chicken thighs
  • 8 chicken drumsticks
  • 6 cloves garlic
  • 3 tbsp extra virgin olive oil
  • 6 bell peppers (2 green, 2 red, 2 yellow)
  • 2 cans of peeled tomatoes
  • salt and pepper
  • rosemary and thyme
  • 2 tbsp herbs the province
  • 1 1/2 cup dry white wine
  • 2-3 cup chicken stock (low sodium)
  • 1/4 cup black olives
  • 2 tbsp capers

Start by patting dry the chicken with some kitchen paper

remove the skin and season with salt and pepper

Wash up the bell peppers

and slice them up

open up 2 cans of peeled tomatoes

In a french oven (I used my beautiful Le Creuset Oval French Oven pot – which I LOVE) heat up the olive oil. When hot brown the chicken in small batches until it gets a nice golden color on both sides (about 6 min per side) – No not overcrowd the pan!

Remove from the pan and set aside

Now you see all those dark bites sticking at the bottom of you pan, DE-GLAZE!

Pour in the wine and using a wooden spoon scratch them off, let the wine evaporate and reduce.

Move chicken back into your French oven,

add garlic, tomatoes, bell peppers, rosemary and thyme. season with salt and pepper. Pour in the chicken stock, cover with a lid and let is simmer for about 40 min.

Remove the lid, add black olives and capers keep cooking on low-medium until juice has reduced.

Sprinkle some herbs the province – one of my besties brought me this sac from France – my kitchen smells divine!
