Beetroot Strawberry Smoothie
It’s time! IT’s TIME!
Summer is coming up and we need to get rid of all those heavy sweaters and coats. Shorts, skirts, naked legs! That’s what summer is all about…So it’s time people, time to get on that diet to lose that extra 1 (or 2-3) kilos that we have gained over winter.
This smoothie will do the trick. It is healthy, low sugar, vegan and SUPER tasty! You can drink it for breakfast or as a meal replacement for dinner.
It is the copycat of Lizzy’s all natural Red Velvet smoothie, which I love and order regularly on Kate&Kimi here in Shanghai.
But if you don’t live in Shanghai and still want to enjoy a cup of this purple beauty, well, get to the kitchen and let’s blend!
Ingredients (makes 3 servings):
- 1 large roasted beetroot
- 10 fresh strawberries
- 1 cup almond milk (unsweetened)
- 1 tsp agave
- 1/2 tsp vanilla paste or extract
- 1 tsp raw cocoa powder
Place all the ingredients in a blender
and blend until smooth (add a few tbsp of water if too thick)
Pour into your glass and enjoy!
This smoothie can be stored into bottles for up to 2-3 days if kept in the firdge!
