Dry-Roasted Edamame with Cranberries

I don’t know about you but me, I can’t stop snacking when I’m at the office. I snack on anything available: cookies, nuts, fruits…and when nothing is available I go buy some Chinese steam bread with different fillings! Yes, I am guilty!
When I came across this recipe on Martha Steward website I was thrilled and excited! It sounded like the perfect solution to my snacking-disorder!
A nice break from nuts, edamame gives this unconventional trail mix a satisfying crunch, plus they are high in protein so will keep you full for longer! Here is the recipe 🙂
Ingredients:
- 100 g fresh edamame
- 1 tbsp extra-virgin olive oil
- Coarse salt
- 1/4 cup dried cranberries
Pre-heat oven to 200 C. Wash up your edamame
boil them for about 20 min, then remove them from their shells. Arrange edamame on a baking sheet and drizzle with oil. Season with salt.
Roast, stirring occasionally, until crisp and golden, 20 to 22 minutes.
Let cool. Toss with cranberries.
Store into an air-tight container for up to 3-4 days!
