Feel Good Recipe – Vegan Beetroot Chocolate brownies!

I left you with a Feel Good Recipe last week and here I am this week with a new one!

The last week and weekend has been so hectic for me with lots of work to get done at the office and cooking show at Design Shanghai for V-zug. This last one was a real blast and I had SO much fun cooking with V-zug team and appliances!

But this week, we are back on healthy recipe ideas to make you Feel Good! This recipe is the perfect snack for those of you who can’t give up on something sweet, yet want to keep an eye on the scale and have a healthy and nutritious diet.

These brownies are SUPER fudgy, thus when you stick a fork in them it won’t test clean. Let them rest for a long time (30 minutes-ish) before cutting into them in order to give them a chance to set up. You don’t need to worry about these being “under-cooked,” because they’re vegan…as in no eggs…as in you won’t get sick…so no excuses, drink the batter!!!



  • 1 tbsp ground flaxseeds
  • 3 tbsp hot water
  • 1/2+ 2 tbsp pureed roasted beets
  • 1-1/2 tbsp coconut oil
  • 1/2 cup + 1 tbsp coconut milk (full fat)
  • 1/2 tsp vanilla extract
  • 1/3 cup raw cocoa powder
  • 2 tbsp corn starch
  • 1/3 cup coconut sugar
  • 1/2 cup + 2 tbsp almond meal
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon

Preheat the oven to 180 C (375 F), and lightly oil a baking dish.
In a small bowl, place the flax-seeds

add the water and stir together (this process makes 1 vegan flax “egg”) NOTE: you can use a normal fresh egg if you don’t care about being vegan

Allow it to sit and thicken for about 10 minutes

Add the chopped roasted beets to a blender. Blend for a few seconds to chop/puree the beets.

Add the flax mixture and the remaining ingredients to the blender

Blend very well until completely smooth.

Pour the brownie batter into the prepared baking dish and smooth it evenly with the back of a spoon…Lick the spoon!

Place on the center rack of the oven and bake for 45 to 55 minutes.

Allow brownies to cool 30 minutes before slicing into them.
