Korean Kimchi Soup
Korean comfort food, Kimchi soup is a healthy and heart warming dish to serve on cold winter nights!

I don’t know where you guys live, but here in Shanghai we are experiencing a VERY cold winter. Last week we had -8 and this morning when I woke up it was all covered in snow.
I can’t handle cold weather…my Southern Italian body is just not made for that. Someone send help please!….or send soups, just send soup!
This spicy kimchi soup was just what I needed to warm my body and soul. It is very easy so if you like spicy, give this a try!
Ingredients (serves 4):
- 4 cup chicken broth
- 2-1/2 cup water
- 3 bone-in, skinless, chicken tights
- 1 tbsp. minced garlic
- 2 tsp minced ginger
- 1/4 tsp salt
- 2 cup kimchi
- 300 gr soft tofu
- 3 scallions, white and green part
Mince garlic and ginger.

Bring broth and water to a boil with ginger, salt and garlic.

Remove skin from chicken and add chicken to the pot. Cook for about 20 min.

Remove chicken, and when cool enough to handle, shred the meat off the bone.


Grab some kimchi and NO, don’t eat it…yet!

Add chicken back to the pot together with kimchi

Cut out the tofu into big pieces and add it gently to the pot. Gently shake pan so tofu is covered in liquid.

Cook for about 5-10 min. Your soup is ready. Add scallion and serve 🙂
