Awesome 24h marinated roasted chicken

NOW I need you to focus and listen to me. Today is the day I share with you my awesome recipe for making my “shake you off your chair” roasted chicken.
The secret? 24 hours of marinating. Special ingredients? NONE, just olive oil, salt, pepper, garlic, rosemary and some good quality white wine!

You can pair it with my Pilaf rice with toasted almonds, they match divine!

Here is the recipe

Ingredients (Serves 2):

  • 6 chicken drumsticks
  • 1 head of garlic
  • 3 tbsp. + 2 tbsp. extra virgin olive oil
  • salt and pepper
  • fresh rosemary and thyme
  • 1/2 cup dry white wine

Rub the chicken with salt underneath its skin then place it in a zip lock bag with 3 tbsp. extra virgin olive oil, garlic, fresh rosemary, thyme and wine. Refrigerate for 24 hours to up to 36 hours!

When ready just drizzle 2 tbsp. of extra virgin olive oil in a baking tray, pour the chicken with all its marinate

and bake at 200C for about 40 min

Serve it up with a side of roasted vegetables or with my awesome pilaf rice and toasted almonds.
