Rice Pilaf with Toasted Almonds
If you are looking for a healthy and tasty new way to cook rice, well you are in the right place. This pilaf rice calls for some easy ingredients to make a side dish that is perfect to pair with chicken, pork of also beef.
Ingredients (serves 2):
- 1 tbsp. butter
- 1/3 cup diced onion
- 1/4 tsp. ground coriander
- salt and pepper
- 1 cup basmati rice
- 2 cups of vegetable broth
- 2 tbsp. chopped fresh parsley
- 1/4 cup sliced toasted almonds
Chop up the onion
In a medium saucepan melt the butter, cook onion stirring until golden, about 5 min
Add coriander, season with salt and pepper then add rice and stir around until edges become translucent (about 2 min).
Pour in the broth, cover with a lid, bring to a simmer
and let cook until all liquid is absorbed and rice is cooked. About 15 min.
Chop some fresh parsley
and slice the almonds
Remove from pan, add almonds and fresh parsley. Gently toss fluff the rice and stir gently.
Serve it immediately.
