Chocolate Chip Marshmallow Cookies

These cookies will rock your boat, make your skirt fly up, turn your world upside down! Oh yeah, this is good stuff, and when I say good, I mean GOOD!
I used my standard chocolate chip recipe, but added some hazelnuts and marshmallow. Oh lord, these cookies made my day! My bf and I whipped them off in one night while watching Star Wars 😀
Let’s bake!
Ingredients (makes 12 cookies):
- 1/3 cup unsalted butter, soften
- 1/4 cup brown sugar
- 1/4 cup granulated white sugar
- 1 cup flour
- 1/2 tsp vanilla bean
- 1 tsp baking powder
- 1/2 cup chocolate chunks
- 1/3 cup mini marshmallow
- 1/4 cup hazelnuts, chopped
- 1 whole large egg
In a bowl of your electric mixer combine butter, brown sugar and white sugar.
on medium speed, mix the ingredients until creamy (2 min), then add the egg.
Keep mixing until the egg is well incorporated. Scrape down side of bowl, then add vanilla extract, baking powder and flour. Mix on low just enough so that the ingredients get mixed all together (less than 30 sec).
Chop up some chocolate
and some hazelnuts and add those to the batter and mix a few pulses to incorporate
Now grab some mini marshmallow
using an ice cream scoop, pick up some of the batter, then add 2-3 marshmallow in the center and cover with more batter. You want the marshmallow to be completely coated inside the mixture so that they don’t burn while baking, but will just get nice and soft.
Lay the balls of batter about 1.5 inch apart on a baking tray laid with parchment paper
Bake your cookies in pre-heated oven at 180 C for 10-12 min. Remove and set aside for 1 min
Then let them cool completely on a wire rack.
